We are using your Azo-Barley Glucan (S-ABG100) solution as substrate for bacterial beta-glucanase screening. The original method uses Zn-acetate and methoxyethanol as precipitant. All other Azo-substrates use ethanol as precipitant. Why?

We use the Zn acetate in the methoxyethanol to help precipitate all the protein in malt extracts (i.e. to prevent haze).   However, we have recently developed an alternative precipitant [Industrial Methylated Spirits (IMS)/Zinc acetate] for this assay.   The details of this precipitant is given in the updated version of the Malt Beta Glucanase Kit booklet.
