How many units of Lichenase (E-LICHN) would I need to hydrolyse oat beta-glucan to soluble carbohydrates that possess molecular weights less than 7,000?

To get oligomers of molecular weight of about 7,000 you will only need about 2% hydrolysis. One Unit of enzyme activity will give ~ 2% hydrolysis of 1 gram of beta-glucan per hour at 60˚C.
